Name: Luminoso

Style: Sour Belgian-Style Blonde Ale

ABV: 5.6%

This sour blonde ale was aged in a variety of barrels and was then blended with our light and refreshing kettle sour, Provincial. The range of barrels and the addition of brettanomyces yeast contribute wild characteristics, while the Provincial adds a bright tartness that keeps you coming back, sip after sip.

Notes of sour lemon and wild brettanomyces complexity.

Pairs well with dramatic entrances


Name: Dark Prophet 2017

Style: Bourbon Barrel-Aged Belgian-Style Dark Strong Ale

ABV: 11.0%

This deep mahogany-colored dark strong ale has a wonderful aroma of vanilla, dark fruits, and spicy oak. With the addition of cacao nibs, the chocolatey flavor is complemented by fig, date, and oak undertones. The oak tannins balance the chocolate malt flavors and the beer finishes with a slight alcohol warmth.

Notes of rich caramel and chocolate.

Pairs well with crushing dreams.

Name: Quad aged in Bourbon Barrels 2016

Style: Belgian-Style Quadrupel Ale

ABV: 11.5%

Our Belgian-Style Quadrupel, inspired by the Trappist breweries of Belgium, was aged in bourbon barrels to allow the unique flavors of oak and bourbon from the barrels to meld with our base beer. Traces of bourbon and a slight alcohol warmth lead to a dry finish that makes this the perfect beer to enjoy on a cold winter evening.

Notes of spicy vanilla, oak, caramel, dark fruit, and hints of bourbon.

Pairs well with heavy lifting.

Name: Oud Bruin

Style: Flanders Brown Ale

ABV: 7.5%

Oud Bruin is our traditional Flemish style sour produced from a blend of beers aged for up to 2 years from a variety of oak barrels. Long, slow fermentation with a blend of Brettanomyces, Lactobacillus and other sour cultures contribute the characteristic tart flavor. The Funkwerks sour beer program was launched in early 2012 to produce traditional beers of the Flemish region of Belgium to appease the current and future sour enthusiasts. Pucker up.

Notes of black cherry, raisin, and a hint of dark chocolate.

Pairs well with pared pears.

Name: Bourbon Barrel-Aged Quad 2015

Style: Quadruple Ale aged in Bourbon barrels

ABV: 11.5%

Our Belgian-style Quadrupel, which was inspired by the Trappist breweries of Belgium, sat in bourbon barrels for a year allowing the unique flavors of oak and bourbon from the barrels to meld with our base beer. Hints of bourbon and a slight alcohol warmth lead to a dry finish that makes this the perfect beer to enjoy on a cold winter evening.

Notes of spicy vanilla oak, caramel, dark fruit and hints of bourbon.

Pairs poorly with New Years resolutions.

Name: Deceit Aged in Rum Barrels 2015

Style: Barrel-Aged Belgian-Style Golden ale

ABV: 9.0%

Our award winning Belgian-style golden ale Deceit was aged in oak rum barrels to produce this strong yet deceptively smooth brew. This beer pours a beautiful golden color with alluring aromas. Spicy notes in the flavor are complimented by tantalizing and complex characteristics pulled from the oak barrels.

Notes of fresh pineapple and a hint of coconut with the complexity of spice and oak.

Pairs well with an eyepatch and a peg leg.

 Name: Saison Aged in Red Wine Barrels

Style: Barrel-Aged Saison ale

ABV: 7.2%

We took a batch of our Great American Beer Festival gold-medal winning flagship Saison and let it age in red wine barrels. The oak smooths the effervescent and spice notes of the Saison and adds amplifies the fruit characteristics.

Notes of passionfruit, ginger, black pepper, and red wine.

Pairs well with an extended pink finger. 


 

 

 Name: Barrel-Aged Tropic King

Style: Barrel-Aged Imperial Saison

ABV: 8.3%

We took a batch of Tropic King, one of our best selling beers and Saison’s bigger brother, and put it into Whiskey barrels. The oak contributes to the tropical fruit flavors of Tropic King to produce a richer, more complex flavor profile.

Notes of passionfruit, mango, black pepper and a hint of whiskey.

Pairs well with being on hold with your insurance company.

Style: Barrel-Aged Belgian-Style Golden Ale

ABV: 9.0%

Our award winning Belgian-style golden ale Deceit was aged in a variety of oak barrels for 18 months to 2 years to produce this strong yet deceptively smooth brew. Aromas of fresh apple and crisp white wine.

Spicy notes compliment the complex characteristics pulled from the oak barrels.

Pairs well with a well-aged fruitcake you found from 2 holidays prior.

Name: Peachy King

Style: Whiskey Barrel-Aged Sour Imperial Saison Ale with Peaches

ABV: 8.5%

We took a batch of Tropic King, one of our best selling beers and Saison’s bigger brother, added peach puree and souring bacteria and aged it in whiskey barrels. The oak and fruit work well in this tart beer while adding a new complexity to the tropical fruit flavors of Tropic King. 

Notes of passion fruit, mango, peaches, black pepper, and a hint of whiskey.

Pairs well with using too many emojis. 

 


 

Name: Blanc

Style: Barrel-Aged Saison Ale Brewed with Grapes

ABV: 7.5%

In alliance with River North, friends and fellow lovers of Belgian yeast, we bring you two unique yet complimentary Saisons.  Each of the beers blend both breweries’ house saison yeast strains. The beers each take on their own complexion from there. Blanc is a traditional light Saison supplemented with chardonnay grapes and subsequently aged in Chardonnay barrels for over two months.

Pairs well with burner phones.

 


 

Name: Bramble

Style: Brett Saison brewed with blackberries

ABV: 7.6%

Belly up to Bramble, a barrel-aged black saison bespeckled with Brettanomyces and blackberries. This brew begins with our house Saison yeast strain. An added brett strain brings a bit of funk; dark candi sugar and berries boost a supplemental sweetness.

Best enjoyed beside a babbling brook between friends. Bramble on.

Pairs well with your dad, who rambles.



 

 Name: Mokra

Style: Barrel-Aged Black Saison ale

ABV: 7.2%

Brettanomyces is a wild yeast strain that can give beer interesting, delicious fruit flavors, but sometimes Brett can be a fickle fellow. The Brett we threw into this brew was defiant. However, sometimes when you let Brett sit for a while, it will come around. We decided to let it sit in Bourbon barrels. This experiment took a year and a half, but came together and developed into a delightful brew.

Notes of coffee, cocoa nibs and a hint of fig.

Pairs well with time outs.



Name: Punch

Style: Red Wine Barrel-Aged Saison 

ABV: 7.2%

Our flagship Saison had never been aged on oak before now, and our curiosity was peaked. We received six red wine Puncheon barrels at the end of June and filled them with our Saison. A puncheon barrel is over twice the size of a regular oak wine barrel. Sitting for two months gives this beer subtle oak and red wine characteristics without being overpowering.

Notes of passionfruit, ginger, black pepper, and red wine.

Pairs well with starting your own fight club.


 Name: Tropic King Aged in Peach Whiskey Barrels

Style: Our imperial Saison (Tropic King) aged in Peach Whiskey barrels

ABV: 8.3%

Named one of the Top 25 Beers of the Year in DRAFT Magazine in 2014. Originally came about as an experiment in 2013 when we acquired some Peach Whiskey barrels and filled them with Tropic King. Tropic King was the perfect fit for a Peach Whiskey barrel because of its distinct apricot fruitiness.

Notes of passion fruit, mango and peach, balanced by a spicy vanilla from the oak barrel and an earthy dryness from the Brettanomyces.



 Name: Barrel-Aged Dahlia

Style: Barrel-Aged Dark Belgian Ale

ABV: 7.5%

For the first release from our new foeder we brewed a batch of our Belgian dark ale Dahlia. Our Foeder, whom we named Brigitte, is made from French oak and came from a winery in Washington State where it was used to age red wine. The red wine and oak notes compliment the rich and complex malt notes of sweet caramel and fruity esters. 

Characteristics of chocolate, raisins and a hint of red wine.

Pairs well with broken dreams.
