Bramble • Brett Saison Brewed with Blackberries • 7.6%

Belly up to Bramble, a barrel-aged black saison bespeckled with Brettanomyces and blackberries. This brew begins with our house Saison yeast strain. An added brett strain brings a bit of funk; dark candi sugar and berries boost a supplemental sweetness. Best enjoyed beside a babbling brook between friends. Bramble on.

Blanc • Barrel-Aged Saison Ale Brewed with Grapes • ABV: 7.5%

In alliance with River North, friends and fellow lovers of Belgian yeast, we bring you two unique yet complimentary Saisons.  Each of the beers blend both breweries’ house saison yeast strains. The beers each take on their own complexion from there. Blanc is a traditional light Saison supplemented with chardonnay grapes and subsequently aged in Chardonnay barrels for over two months.

Pairs well with burner phones.


 

Punch • Red Wine Barrel-Aged Saison • 7.2%

Our flagship Saison had never been aged on oak before now, and our curiosity was peaked. We received six red wine Puncheon barrels at the end of June and filled them with our Saison. A puncheon barrel is over twice the size of a regular oak wine barrel. Sitting for two months gives this beer subtle oak and red wine characteristics without being overpowering. Notes of passionfruit, ginger, black pepper, and red wine.

Pairs well with starting your own fight club.



Tropic King Aged in Peach Whiskey Barrels • Imperial Saison aged in Peach Whiskey Barrels • 8.3%

Named one of the Top 25 Beers of the Year in DRAFT Magazine in 2014. Originally came about as an experiment in 2013 when we acquired some Peach Whiskey barrels and filled them with Tropic King. Tropic King was the perfect fit for a Peach Whiskey barrel because of its distinct apricot fruitiness. Notes of passion fruit, mango and peach, balanced by a spicy vanilla from the oak barrel and an earthy dryness from the Brettanomyces.

Barrel-Aged Dahlia • Barrel-Aged Dark Belgian Ale • ABV: 7.5%

For the first release from our new foeder we brewed a batch of our Belgian dark ale Dahlia. Our Foeder, whom we named Brigitte, is made from French oak and came from a winery in Washington State where it was used to age red wine. The red wine and oak notes compliment the rich and complex malt notes of sweet caramel and fruity esters. Characteristics of chocolate, raisins and a hint of red wine.

Pairs well with broken dreams.


 

 

Dry Hopped Provincial • Belgian-Style Sour Ale • 4.2%

What happens when you combine a sessionable sour beer with a healthy dose of fruit forward hops? Dry Hopped Provincial is a wonderfully delicious combination of the floral flavor and aroma of hoppy beers with the succulent tartness of a sour. Specifically selected hops to contribute to the musky tropical fruit characteristics, making it a perfect beer to enjoy on a hot summer day or on a cool fall evening. Notes of citrus with floral aromas.

Mango King • Imperial Saison Ale Brewed with Mango • 8.0%

Since its first recipe defiant brew, our favorite happy accident Tropic King has become a staple to our beer portfolio. In this seasonal rendition we’ve added mango puree to enhance the juicy tropical fruit flavors from the Rakau hops. Notes of passion fruit, mango, pepper and ginger… and more mango.

Solenna • Belgian-Style Ale with Brettanomyces • 6.3%

Solenna pairs the fruitiness of a traditional Belgian yeast strain with the subtle spicy character of Brettanomyces and the floral notes of German hops. Notes of candy apple, cinnamon and fresh-cut grass give way to a dry finish and firm lingering bitterness.

Hibiscus Provincial • Belgian-Style Sour Ale • 4.2%

Provincial is our sessionable Belgian-Style sour ale brewed utilizing a unique 24-hour warm souring technique using lactobacillus in the wort. We fermented with a Belgian wheat yeast strain famous for fruity flavors and a dry finish, making it the perfect complement to fruit. This delightfully tart fruit beer is refreshing, with a citrusy apricot aroma that transitions into a subtlety sweet and tart finish. Notes of lemon zest and hibiscus.

Ten • Belgian-Style Quadruple Ale •10%

Inspired by the Dark Strong beers of Belgium, this full-bodied Quadruple Belgian-style ale pours with a deep burgundy hue and a frothy tan head. The malt-forward aromas of toffee and chocolate compliment the dark fruity aromas of raisins and plums. The aromatic qualities follow through in the flavor and combine with refreshing effervescent carbonation. A dry and balanced finish makes this strong but quaffable beer the perfect way to end a long day! Notes of toffee, chocolate, raisins and plums.

Pear Saison • Belgian-Style Ale Brewed with Pear • 6.8%

After six years as a company our flagship Saison is still brewmaster and co-owner Gordon’s favorite of our beers. We took this as a sign to experiment and see what else our Saison can accommodate. In this interpretation of our first medal winning beer you’ll find adjunct pear juice, contributing a dry sweetness that compliments our Saison's phenolic spice. Notes of passion fruit, a hint of spice, and fresh pears.

Pairs well with falling out of hammocks.


 

Chakra • Single Hopped Belgian Pale Ale • 7.1%

This enlightening Belgian-style Pale Ale pushes it’s own style boundaries to evolve to it’s truest self. The historic English Maris Otter malt grounds the beer while imparting a creamy, biscuity flavor. American Crystal hops enhance the herb and spice characters from the vital force of our house yeast while adding a harmonious woodsy, green aroma. This beer finds it’s true fulfillment in your hands. Floral and fruit notes with a woodsy, green characteristic, and a dash of herb and spice character.

Pairs well with balance.


  

Cascade • Single Hopped Saison • 6.6%

Well recognized for notes of grapefruit and spice, the Cascade hop variety is a perfect compliment for the fruit esters of Belgian-Style Saisons. Cascade hops were released in the 1970s and developed through open pollination of a Fuggle hop seedling, and is now the most popular hop variety in craft brewing. Floral notes complimented by citrus fruit and a hint of spice.

Pairs well with chasing waterfalls.


 

Galaxy • Single Hopped Saison • 7.1%

Brewing single hopped Saisons gives us the opportunity to focus on the unique qualities of one hop and we are able to accentuate the best characteristics of that single ingredient. Galaxy hops are known for their tropical fruit flavors, so we added passion fruit juice, just for fun! Notes of passion fruit with a slight spice.

Pairs well with alien abductions.


 

Roselle • Hibiscus Saison ale brewed with spices • 7.0%

Named after a species of Hibiscus, Roselle was originally inspired by Valentine’s Day when brewed once before in 2012. The addition of Hibiscus contributes a striking magenta color with a light pink hue in the head, and introduces a raspberry like flavor with slight floral and earthy notes. Notes of lemon, berries and a hint of ginger.

Pairs well with making up for Valentines day… you know what you did.


 

Serenade • Hoppy Belgian Saison Ale • 4.5%

Serenade was brewed with a base malt, named Serenade from Troubadour Maltings, a local malting company dedicated to locally sourced grains to produce unique malts. Serenade malts contribute subtle nutty characteristics. We chose an array of fruit forward hops to augment the fruit notes, including the Australian Summer hop, which contributes soft melon and apricot flavors. Notes of citrus fruit, melon and a hint of apricot.

Pairs poorly with mariachi bands.


 

287 Southbound • Lager Wit • 7.0%

This collaboration utilizes practices from both breweries with the use of two yeast strains. Funkwerks contributes big flavors of the Belgian yeast strain and spices, while Rahr & Sons imparts the knowledge of fermenting lagers and a long conditioning process. Notes of citrus and chamomile up front. The end showcases the start difference from Belgian beers, with a cleaner and crisper finish due to the lager yeast and long aging time.



Paisley • Belgian-Style Brett Saison • 7.0%

Paisley is the culmination of all our knowledge and experience with using Brettanomyces. Paisley is a unique type of Saison fermented with one Sacchromyces and two Brettanomyces yeast strains that showcase the tropical fruit esters produced by Brettanomyces. A cornucopia of distinctive hop varieties were added to compliment the Brett including El Dorado, New Zealand Rakau, and Australian Galaxy hops. Notes of bright tropical fruits, mango and pineapple, with a touch of Brett funky goodness.

Pairs well with roller skating and Soooooooul Train.


 

School’s Out • Farmhouse Ale • 6.3%

Schooooool’s out for summer! Experimenting with a new Farmhouse yeast strain, this beer is cholk-full of citrus notes from the addition of Mandarina Bavaria hops and a new experimental hop, Lemondrop. Each refreshing sip tastes like summertime. Notes of orange citrus and lemon.

Pairs poorly with lawn darts.




Sorachi • Single-Hopped Saison Ale • 6.8%
 
Summer is here! The perfect time to release a single hop Saison as an ode to warm summer days. We brewed this light pale Saison with Sorachi Ace hops. This unique hop variety originated in Japan and is known for its distinct lemony characteristics, a perfect counterpoint to our peppery Saison house yeast. Notes of citrus, ginger, and a hint of herbal tea.

Pairs well with a vigorous, sweaty, Sumo wrestling match.
